Sodium Hydrogen Tartrate (NaC4H5O6) is also known as a monosodium salt, tartaric acid, and sodium bitartrate. Its IUPAC name is Sodium 3-carboxy-2,3-dihydroxypropionate. It is chemically stable at high temperatures. Due to its stability at high temperatures, it is used in cooking. It is non-reactive as it doesn’t react with metals and other compounds. It is used as a buffering agent. It is used to add acidic foods because it helps to prevent food from rancidity or spoiling. It also shows some antioxidant properties. Due to its antioxidant property, it works as a scavenger for radicals i.e. high reactive species like hydroxyl radicals, and superoxide radicals.

Preparation of Sodium Hydrogen Tartrate

  • When tartaric acid reacts with sodium carbonate then it gives Sodium hydrogen tartrate.

  • As potassium hydrogen tartrate reacts with sodium hydrogen carbonate then it gives sodium hydrogen tartrate.

  • As tartaric acid reacts with sodium chloride then it gives sodium hydrogen tartrate and hydrochloric acid.

  • As tartaric acid reacts with potassium chloride and sodium chloride then it gives sodium hydrogen tartrate and hydrochloric acid.

  • It is soluble in water but insoluble in ethanol. It is moderately soluble in calcium tartrate and highly soluble in sodium tartrate.
